Cheese Enchiladas



  1. Preheat the oven to 350° F and grease a 9×13-inch baking dish with nonstick cooking spray. Pour 1 can of enchilada sauce in the bottom, and set aside.
  2. In a large mixing bowl, combine the cottage cheese, ricotta cheese, ½ cup of the shredded cheese, and the diced green chilis.
  3. Evenly fill each tortilla with about ¼ cup of the cheese mixture, roll, and place seam side down in the prepared baking dish.
  4. Pour the second can of enchilada sauce over the tortillas, cover with foil and bake for 15 minutes.
  5. Remove the foil, top with the remaining ½ cup of shredded cheese and bake for an additional 10 minutes, or until the cheese is melted.
