Do you love the holidays as much as I do? Eggnog is one of my favorite flavors of the season, but its popular ingredients of cream, sugar and whipped eggs have me planning my next workout! Thank goodness there is a better way to enjoy two holiday favorites (eggnog & cupcakes) while scaling down the calories. Rum extract and nutmeg add delicious flavor while Greek yogurt and egg whites nearly save Christmas.  My lightened-up eggnog cupcakes are delicious and best of all, a couple of these sweet treats won’t have you running to the gym.

Lightened-Up Eggnog Cupcakes

Ingredients

Cupcakes
    • 1 (16.5-ounce) package yellow cake mix
    • ¾ cup plain, nonfat Greek yogurt
    • 1 cup water
    • 3 egg whites
    • 2 teaspoons ground nutmeg
Topping:
  • 1 (8-ounce) container light whipped topping, thawed
  • 1 tablespoon rum extract
  • 1 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F, and line two 12-count muffin tins with paper liners
  2. In a stand mixer (or in a large mixing bowl with an electric mixer) beat all of the cupcake ingredients until smooth
  3. Pour the batter into the prepared muffin tins and bake for 15-20 minutes, or until done
  4. While the cupcakes are baking, prepare the topping: In a large mixing bowl stir together the whipped topping and rum extract
  5. When the cupcakes have completely cooled, spread the topping on each and sprinkle the ground nutmeg on each to garnish
